Southern cuisine takes on distinctive local flavor in the Bluegrass. Many restaurants feature the Southern classic "Country Ham," or "Old Ham" (usually cured for one to two years; the longer it's aged, the stronger the flavor.) Kentucky hostesses traditionally serve Country Ham with crunchy Beaten Biscuits. "Spoonbread" is a corn-based "bread" so moist that is must be spooned out. Kentucky Burgoo is a flavorful local stew. Many visitors to Lexington have never before heard of, much less tasted, "Lamb Fries" - but be sure to ask the waiter about this local delicacy before ordering.
